T-Bone and Scallops

I started with two nice Angus Beef T-Bones and some beautiful scallops. Nicely seasoned with a bit of S&P and some EVOO on the Surf


Next up are the Taters on the grill. I par boil some baby reds just before soft and then layer them in a pan with Buttah and home grown chives. On for a bit of Hickory smoke


T-Bones after the first flip.....on the cool side


And now the reverse sear,......Mmmmm


Then the Surf, scallops. I used this pan instead of right on the grate. A bit of EVOO and it work fabulous.

I almost went for T-bones tonight and I am DIEING for some FARKIN' scallops!

Now, is "Marrow Blu-Cheese Buttah" something you get locally, or is it what it reads like? (God I hope it's roasted marrow. I've been dieing to try that too!)

Well done. Well done indeed.

1.) Take beef bones and salt, pepper and EVVO roast in oven at 425* for 40 minutes or until knife tender
2.) When the bones are cool enough to handle scrape the marrow into a bowl while hot
3.) Add Blu-cheese
4.) With a cheese shredder add some unslalted Buttah
5.) Mix with fingers and form into a log
6.) Wrap in cellophane and put in the fridge to firm up
7.) Make steaks and enjoy

That loos really good! I have that exact same basket, now I may have to try scallops in mine. Nice job!
