Baby Back Ribs On The WSM

At Costco (dangerous for us) this weekend and decided to make ribs for all the neighbors and us on the WSM.  It's been too long since I fired this beauty up and loaded it up with delicious pork.

I've probably seen every episode of BBQ Pitmasters and have always wanted to make my own presentation trays like they do when turning in their entries.  So we went to Gordon's Food Service and bought a pack of styrofoam trays.  I also got a gallon of Cattlemen's Kansas City BBQ sauce that I've had my eye on.  We also had a new head of leaf lettuce in the crisper, so all the stars were in line.

Ribs were cooked in the WSM using Jealous Devil Briquettes with chunks of cherry wood buried in the hunsaker basket with vortex deflector.  I didn't use a water pan as I wanted drippings to sizzle for this old school cook.  I also employed the Thermoworks Signals/Billows combo for added control which kept the pit at 250 without issue.  I went 3 hours no wrap, 1 hour wrapped with butter and honey and boat/Cattlemen's sauced for about 30 minutes.  Rub used was Grill & Smoke Sweet Heat and MC Gospel with a mustard binder. 

I made 5 boxes (no pics, was too excited) of ribs for neighbors close by leaving us with about a half rack for dinner.  Our neighbors just across the street bought the house about a month ago and were pleasantly surprised to learn that I do this every once in a while.  Compliments received from all via text/facebook/thumbs up.  So much fun to see those smiling faces, and I did receive a jar of local honey and a dozen fresh eggs from our farm neighbors who also have cows, horses and something that screeches often. ;)

Oh, Kellee also made wonderful homemade Lemon Possetts for desert which went perfectly with bbq to cleanse the palette.

I've never heard of lemon possets before but that looks wonderful, too.

Right?  Golden opportunity to take some presentation pics.  Next time....

The Lemon Possetts were really good and something different that we've never had or done.  They are hollowed out lemons (fruit used for the filling) filled with a light lemon pudding made of cream, lemon pulp/juice and sweetener topped with a fresh raspberry.  Kellee used monkfruit sweetener which is our go to to try and keep sugar intake down.  Good stuff.

Fresh eggs and local honey from our neighbor.....  Bacon and eggs for breakfast this morning were really good.  Biscuits and honey this weekend, can't wait!
