You've got some time to plan and experiment with different methods though which can be fun.  I'd love to have time to try different pizza dough recipes and make personal pizzas on the grills using different methods.  I've gotten a lot of ideas from Michael Symon.  He's got a new outdoor grilling cookbook coming out and he's a weber guy.  He uses multiple kettles and also has a ranch now.  Wanna order that book soon.

I've also done sous vide for various meats and char grilled for a nice finish which works well.  Vac sealing and freezing leftovers can help when you cook too much as we often do.  Then warm up in your sous vide pot while drinking a beer!  ; )
