Following the @Cellar2ful technique.  Salted the night before, fridge overnight, uncovered. Placed a half onion, halved small apple, couple garlic cloves in cavity and trussed the bird. Liberally sprinkled with crab seasoning. One small cherry chunk.  More to come.

Beautiful bird…. Living vicariously through your posts today lol.  In laws have cooking duty today, I’m watching football with my FIL, sipping beer and playing with the dog.  Happy Thanksgiving!

About 2.5 hours total.  In a cooler for trip to folks house.  Intended as a surprise picking turkey.  You know, the one the hungry company devours while we “patiently” wait for the main show !

[/quote  Nice "Spin" and finding a 12lb Turkey here in Costa Rica is difficult if not impossible.  Only encountered Frozen Turkeys 20+ lbs.
