Choice Chuck Roast Saturday

Kellee and I went to Costco this morning for filets and a chuck roast.  Choice cuts of each were readily available so we got a pack of 4 filets and two gorgeous chuck roasts.  Plan was to make @Foster Dahlet recipe (thank you sir!)…. The roasts were so nice that I decided to make one roast close to his recipe and Kellee had the idea to make our own ground chuck with the second roast.  The ground chuck looked so good, we decided to make burgers for dinner and have the pulled beef sandwiches on Sunday.  I enjoyed using two new toys, the kick ash basket for the Summit and my new Weber Dutch Oven.  Pics will tell the rest for the story, will take a few posts to fit them all in.  Sunset while finishing up was nothing short of amazing.

Whipped up the sammys on the little griddle - no bread request from Kellee and these were really good.  Such a fun way to re-heat!

That’s two nice looking meals.

Once you grind your own chuck burgers, you’ll never go back to store bought! I ground a nine pound batch today. Brisket trim, chuck and two small sirloin steaks.

Thanks guys, had a lot of fun on the grills this weekend..... We've got leftovers for days to make the week a bit easier.  And so true Robert, fresh ground beef is in a league of its own.
