Blackened Mahi-mahi On the Summit

It’s Incredible Cajun seasoning on the delicate filets…. Seared on a cast iron pan in olive oil and Kerrygold butter.  My keto standby side, cauliflower tots.  These have helped me keep 30 lbs off for the past year and I prefer them over potatoes now.  Awesome cook in 100F temps.  Fun was had with Beaux boy… he’s the best back yard buddy.
