I wanted a good lunch before going to work later today so I grabbed a grain fed porterhouse and rubbed it with a simple S&P mix and set it aside while I got the GA prepped.
I used only one of my grills to facilitate both searing and smoking.
After letting it heat for a while, I seared the steak for just under two minutes, then flipped and repeated.
Then I slid the grate over so the steak would be indirect and cop a lot of smoke for 10 minutes using some plum wood.
Served it up (to myself) with a nice simple salad.
And that was lunch for today.
