I was out mucking around with my kettle and giving it a clean. I lit some old charcoal and bead mix to burn of the inside of the kettle and dry it, and I thought 'Why waste a perfectly good lit fire?' So I pulled a Porterhouse from the fridge, let it sit for half an hour, rubbed it with the Aldi Tex Mex spice rub and seared it for 2 minutes either side. Then put it to the side and added some Plum chunks that I got from my dad's orchard and smoked it for 10.
My God, I love meat!
Next time I'll reduce the sizzle time and have it a bit pinker. Otherwise it was a beaut!
