Slow&Smoke beef ribs

Hello everyone.

Yesterday I found a little butcher shop where they had beef ribs. I bought two pieces of 2,5 kg aprox each.



Today!! Today is the day "D" for try the real Slow&Smoke style hahaha

First I prepared ribs with some of apple juice, pepper, paprika and salt.

I let stand for two hours. Meanwhile I prepared the barbecue. A little amount of charcoal briquettes and fire!



I searched the 120ºC / 250ºF
And put the ribs.....

1, 2, 3, 4 Hours

Maintained from 120ºC in the kettle to 160ºC, and I searched slowly 80ºC / 175ºF into the meat.

I "Painted" with bbq sauce the last ten minutes

And Done!











TASTY!!!!

Those look awesome...for those here who are doing briskets, I suggest switching to smoking a whole plate of beef short ribs.  They are an easier, shorter cook, and quite honestly taste better than brisket.  Love your knife in that last pic BTW.

I need to cook some of these. I'm not a huge fan of brisket. But those look amazing.

Those are some mighty pretty ribs, nice job.
I swear, when I score a great deal on a 26" I'll stop buying grills... So often.

Yes, it's tasty. And, I want try beef short ribs too.
This knife it's a great tool in my kitchen.

Yes, you're right. Sorry for say beef ribs because this is not real ribs.

I don't know a lot about beef meat cuts and in this opportunity I was lieded.

It's most difficuld find clean beff ribs here. But, no problem I'm continúe looking for "the good beef ribs" ;-) I'm happy because : Iter ad Ithacam erit valde longissima
