It seems the latest rage is to make a foil "boat" for your brisket. I have watched multiple videos on this. Just wondering how many of you here have tried this?

What were the results? Good? Bad?

Open or closed...that is the question!

Doing an all-nite-smoke tonight, Imperial Wagyu. Might try the boat method.

Smoked 3 brisket last night and used the foil boat after wrapping in peach paper.  Worked great and used less foil.

Didn't get many pics because didn't want to get all the grease from my gloves all over the phone.  Here's one pic though which shows the bark and smoke ring

Seeking a Black Sequoia I know I know, I'd settle for just the tabbed no leg grill

I've done this.   It definitely allows you to save your au jus.  That's stuff is like liquid gold.  I like to dip my flat slices in the jus.

How about just cook it in a foil pan?  Not speaking from experience, just wondering....

That is a good idea.
We just did another Imperial Wagyu, pink butcher paper wrap. 10 hours in the kettle, another 6 hours rest time in the cooler.
This is the best one of the recent three we smoked!
