1st Brisket

I am about 5 hours in on my first brisket on my "B" code brownie. Using pecan chunks and cherry pellets.
So far so good.

Congrats on smoking your first brisket, hopefully there will be many brisket cooks in your future.

Looking good so far. Keep us posted.

Use temp as a guide, pull when probe tender and rest in a cooler for two hours.

I pulled it when the probe came out easily. Temp was 205. I gave it a 10 minute rest then put in the cooler. Will add photos when I get back home.

Finished. It came out amazing. Room to try some different things next time, but it came out great for a first.

I was worried about dryness, but it came out juicy and tender.
I did not want to take forever with a snake, so I put my charcoal baskets in the middle and poured charcoal 3/4 of the way around it with chunks of pecan in the beginning. I lit my Amazen tube with cherry pellets and let it go. Checked it every so often, until the bark looked good and when the temp probe came out cleanly I pulled it. I pulled it at 205, next time I will pull it a little earlier.
