Foster Dahlet

17 lb prime packer from sams club.  I cut off about 4 lbs of fat before the cook.  15 hrs on the 26er.  Very tender and tasty.

Brisket looks moist, great brisket good.

It amazes me how much fat is removed from packer sometimes.

I like to cook brisket, I smoke about one a month on a 18" or 22" WSM. One of these days I'll try it on my 26er.

Agree, looks really good.  Soon I will try my first brisket!  Having too much fun with everything else in this fun grilling experience....

Looks great!  I cooked a smaller brisket yesterday. I've been getting them from a local butcher that buys from local farmers. They do all the trimming for $.50 per pound. I love it.

Save that fat place in a slow cooker on high let melt down and use to cook potatoes,fries etc.

Nice...I used to Jack brisket up everytime I tried it on my kettle. My wife could do it proper, on a kettle. Then I got an EX6. I've done 3-4 with outstanding results. That one looks proper. Cudos to you and your brisket. Well done!

Sounds great @HoosierKettle . Wish we had a true local butcher here. Butchers are scant these days.

You probably have an old school slaughter house / butcher near you. Looks like possibly one in Calhoun. Sheriffs processing. Looks like they actually slaughter and not just a fancy butcher shop.
