Roast Beef this Weekend

I've been wanting to smoke some roast beef for sandwiches so I started doing research last week on the best type of beef to use.  I settled on Eye of Round and the local grocery store had them on sale for $6/lb, I ran and picked one up Saturday morning and grabbed the last one they had.  I injected with a mix of W, wine and beef broth coated with Killer Hogs, then tossed this 2.5lber on at 225 for around 2 to 3 hrs (I forgot to right down when I pulled it, but I guess I could look at my photo time stamps) till it hit 135.  I was impressed with the ease of this cook and the sandwich I had yesterday.  Now I just have to figure out the easiest way to slice and store the rest for sandwiches this week!

EOR makes excellent roast beef and your looks good.
I've never injected it before, but it will have to try it.

I use an Italian seasoning blend, salt and cook to IT of 130. Let rest in the refrigerator for a day and slice on a deli slicer.

It taste better and is cheaper than Boars Head.

You can't beat home made roast beef no matter how it's cooked! I always use the rotisserie, takes about 45 minutes or so. Did one yesterday, sliced it today. RB sandwiches for lunch!

Thanks for the roti suggestion.
I cooked a five pound prime eye of round this weekend. Flavor was great, meat was tender and moist.
