It's a good day to smoke so I pulled some ribs from the freezer. Here they are rubbed and ready.



About two hours in.



I'm a little concerned. The smoke has a faint smell of burning plastic. All I can think is that it is the rub in the drippings falling on the fire. I hope it doesn't make a bad flavor on the ribs. I'll know within an hour or so.

OK, not great. The end towards the fire (the skinny end) was dry. I might have overcooked them a bit. They didn't have much bite. They didn't seem to have much meat on them either. I thought the back ribs I did this way were better.
