First long smoke

Put on a 6lb pork butt this morning around 10.

My local Meijer had a stupid sale where I got it for $8  so I snatched it and put it in the freezer until I got back from vacation

Using SNS for the first time also and Kosmos dirty bird as the rub

Making jalapeño Alabama white sauce I saw on swine life YouTube channel.

Keeping metrics like I always do.

Wrapped after 6 hours.
Pulled at 8 hours and it was probe tender

Average temp as 265. Max was 300 lowest was 246

Never really hit a stall. Wrapped to speed up the cook

Nice bark. Bone came out clean.

Paired with a fresh tomato from my garden and the jalapeño white sauce. Delicious.

Nice bark on the pork butt, looks tasty.

Nothing wrong with foiling to speed up a cook. I do it all the time and run my pit temps at 275-300.

I need to try making Alabama White sauce.

I loved it. Especially with the diced jalapeños.

I'm a fan of NC vinegar sauces instead of thick bbq sauces. Plus I enjoy mayonnaise so this is my new favorite.

What's it like?  Like a tangy mayo based sauce. It doesn't sound like it should work but it does.

Thank you. Yea I opened up the vents fully when I wrapped it. No reason not to in my opinion

1 cup mayo ( I used dukes)
1/3 cup apple cider vinegar
However many jalapeños or other Chile pepper you want
Some hot sauce
S&P to taste

Plus you don't have to cook it. Mix and put in fridge until you're ready for it. So simple.

I've had it on chicken and oh my it takes it to another level.

I remember first seeing that sauce in an episode of DDD years ago and thought to myself I must try it!!
