Well it's back to basics. I just got a new Weber 22" Deluxe Performer. I have a Weber Q gasser that I travel with but has been relegate to storage because I am done with propane (again). At 70 years old, I have been cooking on grills and fire for 60 years + if you include hotdogs on sticks and mud wrapped baked potatos around a wood fire at 8 years old.
I cook, that's what I like to do. My current arsenal is now the brand new Weber Performer, a Traeger Pellet Grill, and an CampChef 2 burner propane cook top (think kitchen burners). I have been through 10 years of Big Green Egg (really a great system), 600 lb stick burners back in the 70's- 90's when I lived in Texas, and a plethora of Kettles, Drums, Weber Gassers to include a stainless Summit in the late 90's. In the end, I am back to the Weber Kettle. No more propane, I want the Fire, the Smoke, the Charring, and the Sears that can only be delivered with real fire.
I did a lot of soul searching about what was important. The Big Green Egg would deliver the heat, but, besides big and heavy, was messy and slow to set up. I have the instant light propane option with the Weber Quickfire chimney. This starts in an amazingly short time and is very easy. I have ordered in what I consider to be the best of the options: the medium Vortex, the Slow and Sear II along with the roaster/grill pan, and a weber cover.
