Congrats on your first Weber grill.
We like to grill shrimp, grouper and to blacken fish in a cast iron pan. Blackened fish needs to be a firm fish or it will fall apart.
One of our favorites is to use an aluminum foil boat/pouch with fish, shrimp, scallops, onions, peppers, lemon, herbs, grape tomatoes, splash of white wine and butter. Serve with a side rice.
You can grill fish on the half shell too.
