Triple-butterflied pork loin stuffed with cornbread and mushrooms.

Had my butcher triple-butterfly a pork loin. Then I stuffed it with a mixture of crumbled cornbread, sautéed mushrooms and a few diced green and red peppers. Rolled it up, tied it up, and now letting the SmokeFire do its thing.

That looks amazing!  Wanna see cook pics and time/temp/method details if you can please.  I ordered two shoulders last week and large pork loins were substituted, so I'm looking for something fun to do with them.  This looks like a winner!

Was in a rush, but took some quick pix. Delivered hot meals to three elderly people who are concerned about virus exposure. All three have already sent messages to me, saying it's awesome.
