Double Injected Pork Butt

Going to try something a little different today. I've injected a 9lb butt with Zatarain's Cajun Creole Butter and let it rest for an hour.

Rubbed it down nice and tucked it in for a good 6-7 hour nap.

My intent is to inject once more at the halfway point using Frontera Carnitas slow cook sauce with lime and chipotle.

I've used neither of these products before. Fingers crossed...

Looking good. Love that 26 too ! 

While we're talking injections I'll share mine.  1/4 cup of sugar, not quite a quarter cup kosher salt.  Dissolve in water.   I use a tall 20 oz Pilsner glass to mix.  Mix it half apple juice and half brine.  Some ice to cool.   Takes little time to prepare and adds a huge amount of moisture and flavor.

I usually make a finishing sauce of desired flavors and mix in once it's pulled. I've injected once and couldn't tell that I had injected it. I'll have to give it another try sometime.

I suspect that will be my case as well. Just got done hitting it with the second round of injection therapy.

Temp was in the 145f range. Definitely a big difference on how much the butt took the second time.  Seems that many of the pathways have constricted??

6hrs in, butt at 156f, shooting for 195.

Flat top has been running a consistent 275f. Had to refuel as my initial snake was exhausted.

P.s. I had brushed down a few rust spots with oil on the rim of this kettle when I fired her up.

Got a little carried away with the wiping and did the whole lid.

Do not do this (the whole lid) as it bakes on to a gooey sticky dirt trap. I will be hitting the lid with 00 steel wool once cooled!

165f and counting. Powering through the stall with the likes of the Band, Allman Brothers, Marshall Tucker and  Skynyrd.  This is what cooking on the kettle is all about.

10 hours in and done! Pulled while adding a can of chipotle peppers and enchiladas sauce.

Dressed out on a corn tortilla with shredded cheddar and tomatoes.

Good stuff!

Thanks @HoosierKettle. Yes, the injection added some nice flavor. Not so sure I needed the second round.  If I do it again, it will be one and done.
