Awesome looking meal, how did you keep the risotto from falling thru the grates?

Sautéed garlic and shallots, fried the risotto grains until semi-translucent, added peas and rehydrated mushrooms, then gradually add boiling chicken stock and shroom tea to keep the liquid level just below the surface. Finished with parmesan and heavy cream just before serving.
