Easter Stuffed Pork Loins

Trying something a little different on the grill for Easter this year, since EVERYTHING about Easter seems to be a little different this year.

A twin pack of pork loins:

#1 cream cheese & shredded colby jack, Big Jim green chilies, wrapped in bacon, with Tony’s to season.

#2 Shredded mozzarella & parmesan, spinach, and Meathead’s Simon & Garfunkel rub inside & out.

Both were coated in olive oil, then put on the 26er with an experimental “Faux & Sear” setup made from my DIY larger charcoal basket & a couple disposable Blackstone foil pans. Seems to be holding a steady temp so far. We’ll see...

Came out pretty good, especially considering pork loin isn’t usually one of my favorites. The spinach one wasn’t bad at all, but I think both would’ve tasted better if I’d split the block of cream cheese between them. As much as love bacon, I’m still finding that wrapping things I grill IN bacon is always disappointing. I’ll probably skip that step next time. Overall though, a success!

excellent job of filleting pork tenderloins...

Indeed a piece of pork that small would be done long before the bacon was done...But without the bacon you risk dried up pork.

Looks awesome. I like my bacon crispy so I also tend to not wrap things in bacon .

I admire your idea, butt I have never thought of stuffing pork tenderloin and wrapping in bacon? Hmmmm, butt as was said earlier, the bacon has a different cooking time than the loin... tough call. But it looks like a good meal from here!!

Looks good. My favorite items wrapped in bacon are poppers and fatties.  Other than that I usually prefer no bacon wrap but those do look delicious.
