Three different dimensions primarily used  along with a stacker. Small , medium, large are 18, 14, and 12 gauge respectively.  Bolts are 5/16" with a 2-way reversible lock nuts.

Easily reaches 600F at the perimeter with a 14" stacker.

Cut the metal with an angle and bent it to shape by inserting it under a pipe that's bolted on a tree stump.

I was trying to picture how you use the stump bender but then I got it.  Very clever!
Wife: Let me guess... you want to grill again

I'm curious to know what that plate/ griddle you have there is?

also, what thermometers did you use? have they proven reliable?

The griddle is a convex comal that i converted into a drip pan. Filled with ashes in a kitty litter manner for easy clean up. Also prevent the drippings from getting too hot and start smoking.
Most bi-metal thermometers are fairly accurate and durable but can be notoriously slow especially if it has a short stem.  No idea who manufactures the Weber thermometers. In a kettle setting, chances are they're unlikely to be on an optional location to give off the proper temperature reading so it should only be used as a reference. Charcoal configuration and vent location will always create temperature variances where the foods are situated.

Jules...crazy mod idea.

have you thought about taking flashing or whatever you've made those vortex's out of and flip so the small cone opening is on the bottom and matches the 14" of a Smokey Joe or 18.5" of a Jumbo Joe and create a wide mouth smoker?
