Pig.
« on: July 16, 2019, 08:24:02 AM »
Decided to make some pig head barbacoa taco. Roasted for an hour at 400-450F with a chunk of hickory.  Wrapped with 10 layers of banana leaves followed by 6 layers of aluminum foil and slow cooked at 230-250F for 18 hours.

No refill. Whole 20# bag of Weber. Probably could have gone at least 2 more hours at 220-250F.  Filled to the rim,  ring holds exactly 1 bag of Weber charcoal.

That looks delicious!
Educate me a little, please.
As far as the banana leaves go, do they provide a particular flavor, or is it more for the moisture?
I live in the desert, so banana leaves are not common here.

The banana leaves help with moisture retention and at the same time sdds a nutty/fragrant flavor to the food.  Commonly used in many different tropical countries /territories to wrap certain foods when cooking.  Meats, seafoods,  dumplings, and even pastries.  It's their old fashion version of non-stick aluminum foil with the added benifits of the flavor that it imparts on the food.
Banana leaves are readily available in almost any Asian grocery stores and also some Hispanic grocery stores.  They're on the frozen section and typically cost only  $1/ bag.   If you ever decide to use  frozen banana leaves, defrost  it and then put it in the microwave for 2 minutes.  Heating it up will make the leaves much more pliable and less likely to split.

My wife said she didn't wanna eat those tacos. I would have to cook it while she wasn't paying attention and sneak it in on her lol.
Looks amazing, did you eat his brains and steal his knowledge?
