Hot and fast rib techniques

I remember reading a few threads about guys doing hot and fast and cant find them. I got a rack of ribs last weekend for a good price and was planning on making them Sunday but it rained. This weekend I'm on call for work so I want to make them tomorrow or Thursday. I dont get home till around 5 so I was hoping to try hot and fast on 22" kettle.

What techniques are you guys using? Temps and times etc. Faster the better for me, I have little kids we put to bed pretty early.

Prep the ribs as normal... trim, remove membrane, RUB! ... etc
If you have a S'nS great... dump a full chimney in it and let it rage on.
No S'nS? .. same idea.. loading all your coals on one side will also work!
Add a little wood for smoke.
Ribs "bone side down" on the side away from your coals in a rack or just on the grate.. depends on how many you are cooking.
Spritz with apple juice 2-3 times in the first hour. Rotate the ribs if you are cooking more racks at once.
At the 1 hour mark take them off and wrap in foil with 3-4 shot glasses (1/4-1/2 cup? ) of apple juice in the foil pack.
Place them Back on the raging kettle for 1 more hour!
Final time depends on how you like your ribs and how MANY you are cooking in the batch!

for me hot and fast means for baby backs---temp 275--to 300f...dry rub only no spritz or wrap --2nd hour mark rotate them...take off at 3 hour mark.
