DIY "Slow 'n Sear" in my Jumbo Joe 18" (New style)

Bought a 9" by 5" loaf pan from Target & cut the bottom out w/my Dremel. Set on charcoal grate tight against one side of kettle. Set a couple pieces of firebrick on the other side of the pan for some heat shielding. Filled pan with briquettes, set top & bottom vents wide open, fired it up & set the lid in place.

In short order she was nice & hot, added a package of 5 Johnsonville brats to the indirect side. Roughly checked the grate temp by sticking my handheld temp probe down through the top vent to the grate, it was over 400 degrees. When brats reached 140 - 150 internal, removed lid, transferred brats to direct side for searing. They turned out great!

Verdict (IMHO): I now have my very own S 'n S! I don't imagine it will last as long & the real one would probably perform slightly better but, for a buck & a half plus tax I don't care.

Next experiment: The sides of the pan taper slightly so I'm going to turn it upside down in the exact center of the grill & see how well it would work as a "rectangular Vortex". I'll report back.

In addition, for the 1st time I lit the charcoal with my "Elcheapo" Harbor Freight heat gun. My new favorite charcoal lighter.

A huge THANK YOU to Marzipan! (& to HoosierKettle who also offered.)

**From top to bottom:
1. Altoids tin after burning paint off. I envision drilling holes in the top, fill with smoking pellets for short term smoking such as grilling burgers, brats & etc.
2-3-4. Cutout of bottom of pan.
5. Inside view of cutout.
6. Setup & ready to go with leftover coals from brat cook.

I intend to post a future cook or 2 including with the Altoids tin.

When I used pellets in an a-maze-n tube in my cold smoker I got thick white smoke. Someone recomended turning the pellets to sawdust to get thin blue smoke. I havent tried it yet though
I might have to try the bread pan for my JJ

I have had my eye put for a cheap stainless steel pot/pan to do something like this.  Figure you could cut it in half, and use the second half to make a side wall.  Just bend It or weld it together and drill some holes in the bottom.
ISO: 18" & 22" Lime, 22" Cado, Plum SSP, Clean & Colored 18" for Midget Mod, and the usual Grails.

As promised here's the results/pix of my "rectangular Vortex". Can't actually compare to a Vortex since I've never used one. However, I was very happy with the results, especially considering I've never tried this before.
* Thighs were pretty well cooked inside & out top & bottom with NO flipping.
* Skin should have been crispier so I'll cook longer next time. I took them off the grill in significantly less than the 45 minutes I often see reported.
* Will shoot for 170 degrees internal next time.
* All in all this was the easiest grilling I've ever done.
