Got fish.

Pompano stuffed with scallions, lemon slices and tomatoes. Roughly 30 minutes on the rotisserie at 450-500F. Rub consist of  coarse sea salt &  black pepper.



Stuffing.

It was flown overnight in a red-eye flight.  Actually fish eyes  along with the surrounding soft bone tissues are yummy.

Yeah oily fish such as Pompano are great  cooked high heat on a rotisserie.  You get a deep fried outside texture while the inside remain very moist.  You can also brush on egg white on the last 5-10 minutes to give it an even crisper skin.

Looking good, I'm a sucker for grilling fish
