Didn't have to cook for Thanksgiving since my brother was hosting for the occasion.  I did have enough time to make al pastor for brunch before we headed out.

I like this idea. I'm thinking placing the pineapple on top allows the juices to run down and keep it moist while cooking it at the same time? Do you have anything in the pan at the bottom?

There's a 1" slice of pineapple at the base and a 1/3" inch slices every 2" or so. All the pineapple can also be added to the taco itself as part of the condiments.

Thinly sliced pork shoulder marinated for 24 hours and used for taco.
