Looking good!  I've never tried ribs on the roti.... Let us know how they turned out!

I will definitely be doing them again, but next time I am going to watch my time more closely. They ended up getting a little overdone.

Looks good. What's the rub?
Lots of parsley, garlic, lemon zest and juice, salt, pepper and olive oil.  Cooked hot and fast directly above the coals.  Done in about 40 minutes.
