Brined and roasted.  I was worried it was going be dry and blown out.  But it was actually pretty frickin tasty.  No complaints from the Thanksgiving crew.

Gobble gobble. 13 lb'r on the Black Pearl. I ended up only using the larger apple chunk for smoke. Slathered in a Thyme/Rosemary compound butter. Under the skin as well. Darn tasty bird
