Rubbed with  coarse Hawaiian alaea salt, pepper, cayenne, paprika and smoked for 2 hours at 300F. Wrapped with banana leaves and placed in a pan to continue cooking for 10-12 hours at 220-240F.








There it goes. Should be ready for an early breakfast tomorrow morning.

Real time update. Initially  planned for 16-18 hours but got up a bit late so total  cook time ended up being 19 hrs.  Charcoal was mostly depleted  but was still holding 200F at the grate level.

Decided i want some contrast on the texture so back to the grill it went. Got the grill to 450F and roasted it for 45 minutes. Roasting creates some crust and also helps render excess fats.

Finally done after 20 hours.


Excess fats removed.

Final product.

Final byproduct. Excess, fats, snout and skull with brain still encased.

Got so hungry i didn't have time to prepare the taco condiments. That will be for the next meal. I just ate it Hawaiian style, with rice along with salted diced tomato and onion.
