Beef roast, tried smoking it, couldn’t keep the kettle under 3-325* even w all vents shut 100%...
Put some kingsford briquettes on both sides, lit about 25 in the chimney and scattered on top of unlit coals...
Using weber igrill mini, reached 140* in about 2 hours, maybe a little less...
(Used the pan juice for the gravy...)
Came out juicy... wife said it was “too smokey “... so I guess it was a success...
