Go Anywhere Lamb Shank

Never cooked one before, but it was on sale so why not?

Slathered the shank with chicken fat and rubbed with Simply Marvelous Cherry and garlic powder.  Set up the go anywhere with a 5x5 briq bed of Stubbs and some cherry chunks.  Dropped in 4 lit briqs and watched it settle in around 300.  3 hours later:



Foiled with onions, carrots, thyme and homemade chicken stock for another 2 hours.  Then onto a bed of polenta



with the carrots, onions and reduced foil liquid

The fifth row of briqs had just started to catch at the end of five hours. All told, 5 hours at about 300 degrees used 24 briqs including the four starter briqs. I bought the CGA for small hot and fast cooks, but I'm really impressed with its low and slow capabilities.

Love me some lamb shanks! I always braise then but yours look nice and tender from just indirect heat.  Gota try this sometime.
