So, I've got a dicer attachment for my Kitchenaid. I cook a couple chickens on the roti and then pull the meat. Then, using the dicer attachment, I dice the chicken, onion, celery, pickles, and boiled (or smoked) eggs. This time, I also added fresh cilantro and parsley from my garden.

It is so freakin' good. I will never buy chicken salad from a store again.
