Was out early at Trader's Joe getting some bread for my daughters when i noticed they had marinated chicken thigh shawarma so i decided to give it a try. Just a quick lunch as we are going out later for dinner.
More photos later.

I went with a 11 1/2" charcoal  basket directly underneath  so had to use a secondary pan for a heat shield to keep the bottom from burning.

With the second stacker on.

Homemade 11" and 15" trompo.

Grass green on duty.

Man, that looks fantastic. I grew up in Israel eating this stuff. I make it myself occasionally, but nothing beats the street version of shawarma (I think it is the car exhaust that adds a certain je ne sais qua). Hats off to you for making it at home.

Must be the diesel

I was surprised how good it was being store bought.  Better than most that you find at local shawarma joints.  Nice thing too is that they're sold in roughly 1 1/2 lbs pack so you  can buy the exact amount that you need.

I just finished a perfect Salmon steak dinner and this has me licking my chops after 30 mins. Looks Delicious!

It took about 90 minutes to  reach IT of 165F.  Cooked  for the first 30 minutes at a lid temperature of 450F and then dropped it to 375F for the duration of the cook.
