I started late so I split the point and flat. I've not done that so not sure how it will turn out.

I'm cooking normal with water in the pan. Temp has held 240 all day. Top vent open and bottom three cracked. Cherry for smoke. Weber briqs. It powered through a couple rains today luckily.

They are wrapped in butcher paper currently. I'm shooting for 8pm hopefully. If it works, I will have 12lbs of brisket done in 8 hours. If it doesn't, I'll order pizza.

I also used my new Bosch electric blower to kick start the coals. Works great.

Looks good man. How's it coming along? I like the battery powered blower. How much does it weigh roughly?

The blower is very light. Maybe 5lbs. I bought Bosch because that's what lithium ion power tools I have. The other major brands make one as well that's available tool only. Dewalt and Makita for sure. I'm not sure about the others.

The brisket turned out really good. I cut up the flat and the point is still resting. I fried several sweet potatoes and made baked beans.

A little follow up cook with the leftovers. I made a purée of chipotle peppers and a purée with sour cream added. Both were great for brisket tacos. Any bbq put to the iron and made crispy is amazing.
I also made a simple red cabbage, red wine vinegar, olive oil and chive slaw with a little Valentina and salt added.

It sure beats the baloney sammich I had for lunch....
Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...
