420 Morning Smoke

Another day of the week that ends with a "Y" so it's a good day to spark up the kettle and smoke something good. Today I'm smoking a lambs shoulder and giving my iGrill holder it's first run.
Super basic rub mix with onion & garlic powder with some lemon pepper and a shot of my MD rub mix. Dusted with a little smoked salt. Apple & pear wood for smoke.

What temp are you avg on it

I shoot for 250f kettle temp at grill level and let the internal temp rise slowly to about 175f then I shut the vents and let it sit and rest as the grill cools down. This peaks it internal at about 180'ish . As it cooks I sprits it with apple juice to form a glaze and for taste.
If I have problems or short on time I would open the vents and power though the stall.

So you run the probes under your lid during whole cook. Do you see heat loss. Worry about damaging the probes. Just but my master touch.  Thinking of getting tp 20...people say under bottom vent ..top vent etc

Top vent or bottom vent are ok ideas but I like to pick the lid up every half hour or so and sprits my low & slow cooks with apple juice.
I've never had a problem with heat loss or overrunning temps.
I cover my probe leads with alum foil and this works 2 ways.. it keeps the probe cables clean and smoke free and just the ends need to cleaned after the cook. And the loose wrapped alum foil seals any air leaks.
Just to clear things up.. new grills have piss poor fitting lids!! If you are lucky enough to have an older grill or a older 18" grill... these lids fit nice and tight and with those you might have a problem with the leads under the lid! Then you would have to go in the air vent or cut a probe hole and use the WSM grommet or some other type.
I think any Late Model Master Touch is fine dealing with cables under the lid without problems.

Curious, what is that metal extender thing you're using to attach the iGrill to your Kettle? Looks awesome. Where can I buy this?
