First time ribs on the mini wsm

Picked up 5 lbs of pork spares from my local wholesale club

Made a rub out of brown sugar and a mix of spices...if it turns out, I will share recipe

We have ignition.  Wood is apple

I think I overloaded it so might have to screw with the coals once the apple burns off.  Cant seem to get the temp high enough.  If all else fails, I will do 4 hours low and 2 hours at 300 on my Genesis in foil.

My guess would be you have cold meat next to the thermometer, i loaded my Mini up with CSR and wondered why my temp was so low, now i know :-[
Wanted: 18" Platinum any color will work
This is my Kettle there are many like it but this one is mine......

It took an hour, but it finally got up to 200.  Ive been sitting between 210 and 235 for the last couple of hours.  More to follow at 530pm when I foil them in apple juice. :)

Perfect.  5.5 hours and they are falling off the bone with a good smoke ring.





Still have coals left for another cook!  :)

They look great! I haven't used my mini for ribs yet, but I'm going to!
I see you foiled them, did you use the 3-2-1 method?
As far as the temp issues goes: Did you wait for the coals to get up to temp before you put the ribs on? I did a rib roast on the mini last night and had the same trouble keeping the temp up at the 350 mark once I put the meat on. I ended up removing the ashcan from the vent and that did the trick.

Chad, close.  I didn't read the 3-2-1 method until just now.  I did 4-1.5-0    they were a little dry, but nothing a little sauce cant mask.

will def. do the 3-2-1 next time....I love me some ribs.
