Any venison fans?

I’m cooking a backstrap for dinner. In the past I’ve wrapped in bacon, just going to roast this with a little pecan.

Will report back.....

Turned out great, very tender. I went with a liquid marinade as my wife tends to complain of the game taste. It did the job, plus the added lemon juice helped tenderize it.
-Liquid marinade(similar to Dale’s) with added lemon juice
-1 tsp of garlic powder
-2 tsp of black pepper
-1 Tsp olive oil
Set up indirect at 350*F.  Cooked about 25-30 mins. Moved over coals and cooked another 5-7 mins. Pulled off at 155*F internal temp. Rested 10 mins wrapped in foil. It was a hit.

Looks good! So does your grill! Is it your first cook with it?

Seeking a Black Sequoia I know I know, I'd settle for just the tabbed no leg grill

Negative, 3rd cook on it. Did some ribs a weekend ago, were grate. I’ve noticed the heat is getting easier to control. I love how responsive the grill is to the slightest touches to the dampers. And thanks, so far I’m really happy with the Summit.  When I started on this journey back in December, the Summit wasn’t even on my radar.
