Inferno Pork leg

Ok didn’t realise it was deboned but move on from that. Rub with salt injected with special hobo spices ,apple cider vinegar , red wine vinegar and love (brown sugar)

Running this bad boy hot as hell want a good crackel !!!

1hr in dialing down the heat now aiming for ready at 3 hour mark with half hour rest will I do the sides

Ok sober now haha

The muffin tin was bacon cups stuffed with bacon cheese mushrooms bell peppers and topped with an egg

The skillet was a spinach gratain with bacon cheese and Parmesan

The crackling was insane but my timing was out by an hour was running bloody hot , no idea ambient temp but was hot the skillet and cup only 20 mins should of pulled at 15 but know for next time
