There  are 2 versions of pork that they serve at a luau. Lau lau is wrapped with taro leaves and ti leaves. This is the kahlua pork version, usually serve plain or sautéed with cabbage.  Probably more than 90% of all the kahlua pork served in Hawaii are now cooked  in a baking pan or  crock pot. They just add liquid smoke.

Lucky bastard... at least you've been there! Sigh. Some day...
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Bubblehead

We also lived i Hawaii for a quite a while. (24 years)  We loved it and miss it sorely.  Kalua pic is n our table often as well, it's tough to beat!  Do you finish it up with cabbage and onions over rice?

So ono!

Definitely cabbage and rice and macaroni salad on the side. Protein and carbs overload. Also like to
make a sandwich out of the plain kahlua on wheat bread with feta, aragula, tomatoes and a little of mayo.

I've been in Seattle for more than 20 years and I really want to go back and live there. Unfortunately the cost of living is just prohibitive. Most of my immediate  family members are still there. For a family of four, you probably need a 200k yearly income to live comfortably. I'm just not willing to work 60-70hrs/week just to get by.

That's beautiful...
I use a very similar method for making my spicy pork for tacos...
Usually use picnic roast instead of butt because it has a bit less fat...
