First cook on the SnS

I had left over pork butt from another cook so I ended up smoking it. It was a cook full of firsts for me. First time using my redhead, first time using my SnS, and first time wrapping the pork. I used cherry and pecan for smoke. The temps were around 225-240 the whole time. There wasn't really a stall since it was a small hunk of meat, but I still did wrap it at 174 IT because it was past midnight and I wanted to sleep lol I also bumped up the grill to 275. I think it got to 203 in an hour or so. Let it rest, still wrapped, on the counter for a little and then pulled it. We're not eating this right now but I of course I had to do some quality control

I usually cut my pork butts into 3lb chunks to get more bark.

I heard about this from a buddy and I'll start doing it. They cook in less time, are still as juicy and yes, more bark!
