Maple sugar cured bacon-
I got two sides of an American Guinea Hog last month and processed it and this is the second batch belly bacon I've made - only this time I used @CatskillSmoker Maple sugar in the cure. 13 lbs. going down for a 7 day sleep!

Belly Bacon I've made! The Maple sugar took it up a few notches over the last batch I made.

I used the Pellet Poopin WSM with Pacific Pellets Gourmet blend with a 6" AMT loaded with Apple chips. Smoked using the Pellet Pro PID controllers Smoke feature for 2 hours then let them roll at 180* for another 2 hours until they reached 160* internal, bumping the temp up to 250*. Love the convenience of this Cooker!
