Prom night pork....

My baby went to her prom tonight.....and I'm playing taxi at 2am.  So I decided on a late cook. 

This pork will be cooked tonight!  Don't know how yet.  I'm thinking thick cut chops, cuz I'm hunnnngggrrrrryyyy.

ribs pre-boiling & reaching for the lighter fluid!

this pork came out wonderfully moist and great flavor.  i didnt want to cook the loin whole so i cut it into chops.  i trimmed it up before slicing and the trimming made awesome snackies!

here they with the rub.  its actually pretty good....a little kick to it, but just right.  three on the warming rack are made regular seasonall for the boys. 



they all got a quick sear then fanned out for some indirect time.  after a few minutes they each got a dab of tanning lotion. 



quick swish to spread it around..... i love my super long silicone brush.



start flipping to get that other side evenly coated. 



swish swish on that side.....covered them up for another few minutes....



pulled them off and heres the platter!



plated with some chunky smashed taters buttery and cheesy....after i snapped the pic i realized id forgotten the corn on the cob.  twas sweet!



i wasnt going for a crispy outside on these.... wanted to keep them moist as it was a loin.  and moist they were!



the little snackies that i threw on after the loin chops.  these just cooked all night long.  i wish i had more to throw on because it was a good steady heat.
