Made some kettle fried chicken-used this recipe for breading:

Came out very good.  Instead of dipping in egg whites, I sprayed each thigh with olive oil.  I may even try the spice mixture from this recipe
as a rub.

I have not tried this method yet, butt me thinks a nice hot session around the Vortex wood help things along... Gonna try it.
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

I think that's just the "nature of the beast". I don't know if giving the grates a good coat of oil may help.
