Sense I’m moving to TX, I got a new cook book on Tx BBQ for Christmas. Saw this chicken recipe and had to try it. Cabin fever has also set in from the cold so I braved the elements and thawed out the smoker.
Injected and rubbed
Cooked them about an hour in the pans then put them on the grates until temps came up to 160
I then put them back in the pans and applied a marmalade based glaze
Cooked them to temp and served
They were a hit
