I'll treat it like a regular drip pan and clean it whenever. I did a trial run last night to see if it warps under extreme heat and also if it flares up with oil in it.  I used 1 1/2 chimney of briquettes and also addded 6 apple wood splits.   Got the lid temperature to roll over to 250F.  I then poured 2 cups of  cooking  oil in the drip pan  and monitored it for 1 hour.  After one hour, it didn't catch on fire and the drip pan didn't warp at all. Most of the oil evaporated. Sounds like success to me.

Probably not because the center part is only 2" high. Also you'll run the risk of flare ups in the drip pan when  cooking oily foods such as chicken thighs or pork belly with the coals being directly next to it.

That's shame, a once piece Vortex/Drip Pan would be a cool tool ! ! !

First cook using the drip pan. Probably not for everybody on this crowd  but wife requested Japanese grilled Norwegian mackerel (saba shioyaki), so here it is.  Very crispy/flaky skin while the inside remained soft and juicy.  She got home just after i finished cooking but unfortunately i forgot to cook rice.  Oh well, she just have to wait 30 more minutes.

Just thighs marinated with ranch powder  and a little salt overnight. Other than salt n pepper chicken, it's the only thing  cooked on a kettle my picky daughter would  eat. Have to make these at least twice a week.

Don't really plan to keep it  shiny. Every time oil accumulates, i just dump it  out and give it a quick wipe to remove the excess oil.
