Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...

Looking good.  How much did it weigh?  What charcoal config are you using?

It weighed 15 lbs, using KBB, snake.  After about 3.5 Hours had to rotate the brisket as it almost went all the way across the kettle so had to rotate it so the point wouldn't be over the working coals. At that point I added coals and placed a piece of foil in between that part of the snake an the brisket to shield it.   I must have taken 3lbs of fat off, just the hard stuff and left about 1/4 inch of fat cap on.  The stall happened much later than what I would have thought. She's been between 178-187 for over an hour.

Eight hours in 194 degrees. The point is like butter. Zero resistance.  The flat is still has some probe resistance. Just foiled and plan to probe it around 200
