Sous Vide Ham

Wanted to try this out, and yesterday was a good day to do it. 9lb spiral sliced ham (left in the original vacuum sealed wrap) took a 4 hour bath in the hot tub, set to 140.

Onto a 500 degree grill - indirect - for the finish. Plenty of room on the Summit. Glazed with brown sugar and balsamic vinegar. Easy.

Plated after 30 minutes. Very moist, very good. Will enjoy again today...and tomorrow...

Wow that color is amazing! I bet the hot tub helps keep it much moister then other cooking options.

You have to try a steak as your first cook and sear it on the Weber. I do them at 130 for 2 hours. Preseason them with lots of salt, pepper, and a little bit of garlic powder. Let the steaks sit in the fridge for at least an hour before you start cooking. Sear them for 30 seconds on each side on a super hot grill and you have perfection ready to eat.

That’s a medium rare. If you want it medium then I would suggest 135 degrees.  Keep everything else the same.

It doesn't matter. The hams are pre cooked. All you're doing is warming them up.
