How long do you go using the rotating thingamabob?

Just wonder how diiferent they may be from flat or racks?

It reminds me of the Hof-Brau place that's been in the old neighborhood since I've been alive.....
they  do roasts & different stuff on spits &  ones sort of like these....real good !!!

I went for 3.5 on the ribolator. Then I wrapped in foil for 2 and then another half hour with more sauce.

Costco Ribs.

Did you use one or two charcoal baskets? I was doing rolled up spares at my son's place and found one basket to be about perfect to hold a nice low temp as long as I replenished the briquettes during the cook.
kettles, smokers...

Hankb yes one basket, two would run the temps way up and yes I added a few coals along the way.

Also I used a starter cube in the basket and started with just a few lit coals.
