Prime Rib - 6,5 lb (3kg)

Just bought this beef Prime Rib:



Shall cook it this week end, probably sunday. I cut it in two parts for two cooks, one boneless probably smoked/roasted with the home made SNS.

For now the deboned prime rib is in the fridge rubed with salt (for probably the next 36 hours).

I'll let you know how it goes, untill then any advice/comment is more than welcome.

Ok guys, after two days drying in salt, rub ready, and bbq heating up with the home made SNS.

The rub smells like heaven.

Rub recipe taken from amazing ribs :

Ingredients
1 tablespoons ground black pepper
1 teaspoons dried rosemary leaves
1 teaspoons dried thyme or oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon American paprika
1/2 teaspoon chipotle or cayenne powder

Meat in :)

Using thermopro, meat temp target 125 F before searing, Bbq between 225 and 250 F.

For smoke I went with Mesquite chips.

Everything going smoothly  ;D

Cook time 1h 30 to reach 125 internal temp, faster than expected.

Then seared each side for 30 second on a cold grate.

Final result, just how I like it:





Conclusion: Tasted very good, however I would reduce the salt quantity next time, a bit too salty

As regards the rub, I used a recipe from amazingribs.com. Ingredients as follows:

Rub recipe taken from amazing ribs :

Ingredients
1 tablespoons ground black pepper
1 teaspoons dried rosemary leaves
1 teaspoons dried thyme or oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon American paprika
1/2 teaspoon chipotle or cayenne powder

Mixed with olive oil to make a paste.

The salade is a classic fresh greek salad with tomatoes, cucumber, oignons, feta cheese, red wine vinegar, lemon juice, pepper and salt to taste.

One think that surprised me in this cook was the fact that it reached the target temp pretty fast . I was expecting at least three hours cook time, as I was using the SNS (BBq temp between 225 and 250).

Maybe due to the size of the prime rib (cut in two = arround 3 lb) ?

When I see members smoking meat for 11 hours at that bbq temp, I wonder how it is possible ???

That looks wonderful.  That has to be the leanest cut of prime rib I have ever seen.  Nicely done!

Thank you. Honestly I was also proud of the result 😁 I Made a sandwich the next day and it was even better.
